Recipe - Nutty Maple Waffles

Ingredients:

1 One half cup All purpose flour
2 tablespoon Granulated sugar
1 teaspoon Baking powder
One fourth teaspoon Salt
2 Eggs; separated
1 cn (12 oz.) evaporated skim
milk
3 tablespoon Vegetable oil
One half teaspoon Maple flavored extract
One half cup Finely chopped pecans

In medium bowl, combine flour, sugar, baking powder, and salt; set aside.
In large mixer bowl, combine egg yolks, evaporated skimmed milk, oil and
maple extract; beat well. Gradually add dry ingredients, beating well after
each addition until smooth. In small mixer bowl, beat egg whites until
stiff peaks form. Fold into batter. Preheat waffle iron according to
manufacturer's instructions. Pour One half cup bater onto hot iron; sprinkle
with 1 tablespoon chopped pecans. Bake 3 to 4 minutes or until steaming
stops. Repeat with remaining batter and nuts.

For Nutty Maple Pancakes: Pour One half cup batter onto preheated greased
griddle or electric skillet. Sprinkle with 1 tablespoon chopped pecans;
bake and turn. Repeat with remaining batter and nuts.
