Recipe - Nouc Cham

2 Cloves garlic,; finely
chopped
1 Fresh hot chili pepper (
about 1 1/2inch ; finely
chopped
1 tablespoon Plus 1 teaspoon sugar
One half Lime
One fourth cup Fish sauce
5 tablespoon Water
In a small bowl place garlic and chili. Squeeze in the lime and using a
small knife, remove some of the pulp. Add the fish sauce, and water. Mix
well, place in a nice bowl, and set aside.
Yield: about Three fourths cup
