Recipe - Norton-Breckenridge Houses Blintz Souffle

2 cup Small curd cottage cheese
2 Egg yolks
1 tablespoon Sugar
1 teaspoon Vanilla
1 pack (8oz) cream cheese
1 One half cup Sour cream
One half cup Orange juice
6 Eggs
One fourth cup Butter, melted
1 cup Flour
1/3 cup Sugar
2 teaspoon Baking powder
One half teaspoon Cinnamon
Sour cream for topping
Grease a 9"x13" baking pan. In a small bowl, beat together cottage cheese,
egg yolks, sugar, vanilla, and cream cheese until smooth. Set aside.
In a medium bowl, beat together remaining ingredients for batter. Pour half
of batter mixture into prepared pan; carefully spoon filling evenly over
batter. Cover and refrigerate for 2 hours or overnight.
Bake uncovered at 350 degrees for 5060 minutes. Serve with sour cream on
the side.
Serves 8.
