Recipe - Normandy Chicken With Apples

3 cup Apple cider (I used fresh
from the cider mill)
3 Boxes (1.8 ounce) leek soup
mix (like Knorr's)
2 teaspoon Dried thyme
One half teaspoon Grated nutmeg
1 One half pound Red new potatoes, peeled and
minced (I didn't bother
peeling though)
4 Celery ribs, thinly cut or sliced up
6 Green onions, thinly cut or sliced up
3 Apples, cored and cut into
16 wedges each
Three fourths cup Dried cranberries
2 pound Skinless, boneless chicken
breast halves, halved
crosswise
In crockpot (at least 45 quart), combine the cider, dry soup mix, thyme
and nutmeg. Stir to blend. Add potatoes, celery, green onions, apples and
cranberries. Tuck the chicken down into the mixture. Cover and cook on low
at least 8 hours, making sure the potatoes are tender.
