Recipe - No Fry Latkes

2 cup Shredded potatoes
1 cup Chopped onion
1 cup Wheat germ
2 Egg whites
Salt and pepper to taste
The following recipes appeared last year in the N.Y.Daily News. The first
is a recipe from Elaine Kasdan, a good home cook from N.J. It has no fat
except that in the wheat germ.
Preheat oven to 425 degrees. Lightly spray 2 large cookie sheets with
nonstick spray. Combine all ingredients and mix well. Drop One fourth cupfuls of
batter onto prepared pans and press down. Bake 15 minutes. Turn and bake
10 more minutes or until crisp. Serve. Makes 12 latkes.
