Recipe - No-Sugar Fruitnut Muffins

1 cup Chopped dates
One half cup Raisins
One half cup Dried prunes; chopped
1 cup Water
One half cup Margarine
One fourth teaspoon Salt
2 Eggs; beaten
1 teaspoon Vanilla extract
1 cup Allpurpose flour
1 teaspoon Baking soda
One half cup Mixed nuts; chopped
In a saucepan combine dates, raisins, prunes and water. Bring to boil
and boil 5 minutes. Stir in margarine and salt. Set aside to cool.
Add remaining ingredients to fruit; stir just until dry ingredients are
moistened. Spoon into greased MINImuffin pans. Bake in preheated
350degree oven for 15 minutes. (If desired can bake in a greased 11 x 7 x
2inch pan for 30 minutes.)
Yield: 32 minimuffins.
