Recipe - Nippy Carrot Bake

Nonstick cooking spray
3 cup Carrots, cooked, mashed
3 Eggs, lightly beaten
2 cup Milk
1 One fourth cup Pepper cheese, (4 ounces)
1 cup Bread crumbs
2 tablespoon Unsalted butter, melted
Salt to taste
1 teaspoon Prepared horseradish
One fourth cup Chives, finely chopped
1. Preheat oven to 350. Coat a 9inch by 9inch baking pan with cooking
spray. Set aside. 2. In large bowl, combine carrots, eggs, milk, cheese,
bread crumbs, butter, salt, horseradish and chives. Transfer to pan. Bake
about 30 minutes, or until knife inserted in center comes our clean.
