Recipe - Nicely Spiced Pork Loin

4 Cloves garlic, minced
1 teaspoon Salt
2 tablespoon Vegetable oil
2 tablespoon Lemon juice
1 tablespoon Paprika
2 teaspoon Each ground cumin and
coriander
1 teaspoon Ginger
One fourth teaspoon Cinnamon
1 Boneless pork loin roast
(about 4 lb.)
In bowl, mash garlic with salt; mix in oil, lemon juice, paprika, cumin,
coriander, ginger and cinnamon.
Cut 1 inch deep slits all over top and sides of pork; rub paste all over
roast. Roast on roasting rack in pan in 325øF oven for about 1 hour and 45
minutes or until meat thermometer registers 160øF.
Transfer to platter and tent with foil. Let stand for 10 minutes before
