Recipe - New Orleans Shrimp Creole

2 tablespoon Butter
2 tablespoon Flour
1 Onion; large, chopped
One fourth cup Celery; finely chopped
2 Garlic cloves; minced
3 ounce Tomato paste
8 ounce Tomato sauce
1 teaspoon Parsley; finely chopped
3 cup Water
1 Bay leaf
Salt to taste
One fourth teaspoon Cayenne pepper
2 cup Shrimp; peeled
Melt butter in saucepan, stir in flour and cook until golden brown.
Add onions and celery and saute until onions are clear and tender. Add
remaining ingredients except pepper and shrimp. Simmer 5560 minutes.
Add shrimp and pepper. Cook 1520 minutes. Serve over rice.
