Recipe - Nellies Zucchini Casserole

2 tablespoon Olive Oil
1 pack (6 oz) Uncle Ben's White &
Wild Rice
1 Three fourths cup Water
1 Cube Butter
1 Onion, chopped
1 Green Bell Pepper, chopped
2 Stalks Celery, chopped
2 Green Onions, chopped
5 md Zucchinis, chopped
3 md Tomatoes, chopped
12 Mushrooms, cut or sliced up
1 Clove Garlic, minced
1 small Pkg Sliced Almonds
The Seasoning Mix from the
Rice pkg
Seasoned Salt
Garlic Powder or Salt
Onion Powder or Salt
Sweet Basil
Oregano
Italian Seasoning
(A) In 2 Tbsp Olive Oil saute' Uncle Ben's White & Wild Rice until tender.
Add Water, cover and Simmer for 25 minutes. * Do Not add Rice Seasoning mix
at this time*
(B) In another pan, saute' (in 1 cube Butter): Onion, Green Bell Pepper,
Celery, Green Onions, Zucchinis, Tomatoes, Mushrooms, Garlic, and Almonds.
(C) Add the remaining according to taste.
(D) Mix into the Rice. Add One half of this mixture into a baking dish, add a
few slices of Monterey Jack Cheese. Add remainder of mixture, and
completely cover with Monterey Jack Cheese. Bake, uncovered, for 30 minutes
in a preheated
375 degree oven.
