Recipe - Nectarine Topped Oatmeal Muffins

1 cup Skim milk
1 Egg
2 tablespoon Oil; olive or corn
2/3 cup Old fashioned oats
1 lg Nectarine; peeled and minced
1 1/3 cup Flour; whole wheat or white
One fourth cup Sugar
1 tablespoon And One half teaspoon cinnamon
1 tablespoon Baking powder
One fourth teaspoon Salt

Preheat oven to 400 degrees. Coat muffin tin with nonstick cooking spray.
In large bowl mix together skim milk, egg, oil and oats. Let sit while you
peel and dice the nectarine. Set nectarine pieces aside. Combine flour,
sugar, 1 teaspoon cinnamon, baking powder and salt together in a separate
bowl. Mix together wet ingredients(milk mixture)with dry ingredients(flour
mixture). Blend until dry ingredients are just moistened. Do not over mix.
Fill each muffin cup One half full with batter. Top with nectarines and sprinkle
remaining cinnamon on top. Bake muffins for approximately 20 minutes or
until slightly brown around muffin edges. Let cool in pan for 5 minutes.
Remove and place on rack until completely cool. Yield: 12 muffins
