Recipe - Native Crab Cakes

12 ounce Crabmeat
One half cup Bread crumbs
2 lg Eggs beaten
2 tablespoon Light mayonnaise
2 teaspoon Dijon mustard
2 teaspoon Italian parsley chopped
1 teaspoon Thyme
1/8 teaspoon Cayenne pepper
2 tablespoon Unsalted butter
4 Scallion thinly cut or sliced up
Combine all ingredients except scallions. Mix well. Add cut or sliced up scallions
and mix. Form into eight 2inch crab cakes. In a 10inch skillet, melt
butter over mediumhigh heat. Heat butter until hot but not smoking. Cook
the crab cakes for 3 to 4 minutes on each side or until golden.
