6 Cloves garlic
3 tablespoon Shallots; finely chopped
1 tablespoon Lemon grass; chopped
1 tablespoon Ginger root; fresh, chopped
1 tablespoon Coriander root; fresh,
chopped
One half teaspoon Shrimp paste
2 pn Cumin; ground
1 teaspoon Salt
3 tablespoon Good quality veg. oil
(nonscented) for frying

mortar etc. etc. Heat a small skillet on mediumhigh, add the oil. Slowly
fry the paste for 5 minutes until it is fragrant.
