2 One half cup Flour
One half cup Sugar
3 One fourth teaspoon Baking Powder
1/8 teaspoon Salt
One fourth cup Shortening
One fourth cup Unsweetened Applesauce
1 Egg; (lightly beaten) or 1/4
Cup Egg Substitute
1 One fourth cup Skim or Low Fat Milk
1 cup Maine Wild Blueberries; **
sprinkled w/ 1 Tbsp. Flour

Preheat oven to 450. Grease muffin tins. Mix dry ingredients together, cut
in shortening. Add applesauce, egg, and milk. Stir just until moistened.
Lightly stir in blueberries. Fill muffin tin half way and bake at 450 for

may want to add a bit more sugar, as they are not as sweet.
