Recipe - Muffins Morning Glory

2 tablespoon Canola oil
One half cup Nonfat yogurt
One half cup Apple juice, frozen
concentrate
One fourth cup Pineapple juice
1 Whole egg white
1 teaspoon Vanilla extract
2 cup Flour, allpurpose
One fourth cup Fructose
2 teaspoon Baking powder
One half teaspoon Baking soda
1/8 teaspoon Salt
1 cn Crushed pineapple in juice
One half cup Carrots, grated
Spray 18 muffin cups with nonstick spray.
In a large bowl combine the oil, yogurt, apple juice concentrate, pineapple
juice, egg white and vanilla. Mix well.
Add the flour, granulated fructose, baking powder, soda and salt. Mix
again.
Fold in the pineapple with juice and carrots.
Spoon batter into prepared muffin cups.
Bake in 350 over for 1520 minutes.
