Recipe - Mr Foods Vegetable Chili

1 tablespoon Olive oil
1 lg Onion chopped into 1/2

1 Can(28oz)
Undrained
2/3 cup Picante sauce
1 One half teaspoon Chili powder
1 One half teaspoon Ground cumin
Three fourths teaspoon Salt
2 Cans(16oz)
1 lg Red bell pepper chopped
1 lg Zucchini cut into chunks
1 md Squash, summer cut into
Chunks(opt)
Tomatoes, canned crushed;
Red kidney beans drained
In a large saucepan, heat the oil over medium heat. Saute the onion for 2
to 3 minutes. Add the tomatoes, picante sauce, chili powder, cumin, and
salt. Reduce the heat to low, cover, and simmer for 10 minutes. Add the
remaining ingredients, cover, and simmer for 10 more minutes. Serve with
additional picante sauce, if desired.
Yield: 6 to 8 servings
