Recipe - Mr Foods Sweet Potato Pie

2 cn (29oz ea) sweet potatoes or
yams; drained
1 cn (12oz) evaporated milk
2 tablespoon Butter; softened
2 Eggs
Three fourths cup Firmly packed light brown
sugar
One half cup Buttermilk baking mix
2 teaspoon Vanilla extract
Three fourths teaspoon Ground cinnamon
One half teaspoon Ground nutmeg
Preheat oven to 350 degrees. Coat a 9inch, deepdish pie plate with
nonstick cooking spray.
Combine sweet potatoes and evaporated milk in a blender and blend until
smooth. Pour into a large bowl and set aside.
Add remaining ingredients to the blender and blend until wellcombined,
scraping down sides as needed. Add to sweet potato mixture; mix well. Pour
into pie plate, mounding in the center, and bake for 50 to 60 minutes, or
until a wooden toothpick inserted in the center comes out clean. Allow to
cool completely on a wire rack before serving.
A Mr. Food note: It doesn't take much to make this look festive just top
each slice with a dollop of whipped topping and an additional sprinkle of
cinnamon.
