Recipe - Moscardini De Pesach

1 One half cup Coarsely ground, roasted
almonds
1 cup Sugar
pn Salt
One fourth cup Unsweetened cocoa
Matzo meal
1 Grated rind of orange
One half teaspoon Almond extract
1 Egg, lightly beaten
1 Egg yolk, lightly beaten
Preheat oven to 350'F. Combine almonds, sugar, salt, cocoa, 1 cup
matzo meal, orange rind, almonds extract, egg and egg yolk in a small
bowl.
Drop dough by rounded teaspoonfuls on oiled baking sheet dusted with
matzo meal. Shape each cookie into a oval, flatten with bakc of fork.
Bake for 10 minutes. Cool on rack.
Makes 2One half dozen 3" cookies.
