Recipe - Moroccan Marinade

1 lg Onion,; finely chopped
6 Garlic cloves,; peeled and
finely chopped
One half cup Finelychopped red bell
pepper; (optional)
2 teaspoon Finelychopped jalapeno
pepper
6 tablespoon Finelychopped fresh
cilantro
One fourth cup Finelychopped fresh parsley
Juice of 3 lemons, strained
Grated peel (no white
attached) of 2 lemons
Grated peel (no white
attached) of 2 oranges
1 teaspoon Turmeric
2 teaspoon Saffron
1 teaspoon Ground coriander
1 teaspoon Paprika
1 teaspoon Ground cinnamon
2 teaspoon Cumin seeds
Salt and freshlyground
black pepper
In a large bowl, combine all ingredients. Season to taste with salt and
pepper.
Yield: 1 One half cups
