Recipe - Morning Glory Bread (Motts)

2 One half cup Allpurposed flour
2 teaspoon Baking powder
1 teaspoon Baking soda
One half teaspoon Salt
One half teaspoon Ground cinnamon
One fourth teaspoon Ground nutmeg
One fourth teaspoon Ground allspice
Three fourths cup Granulated sugar
Three fourths cup Firmly packed light brown
sugar
One half cup Chunky Apple Sauce
3 Egg whites
1 tablespoon Vegetable oil
1 tablespoon Molasses
Three fourths cup Finely shredded carrots
One half cup Raisins
1/3 cup Drained crushed pineapple in
juice
One fourth cup Shredded coconut
Preheat oven to 375F. Spray 8One half x 4One half inch loaf pan with nonstick
cooking spray.
In large bowl, combine flour, baking powder, baking soda, salt, cinnamon,
nutmeg and allspice.
In medium bowl, combine granulated sugar, brown sugar, apple sauce, egg
whites, oil and molasses.
Stir apple sauce mixture into flour just until moistened. Fold in carrots,
raisins, pineapple and coconut. Spread into prepared pan.
Bake 45 to 50 minutes or until toothpick inserted in center comes out
clean. Cool in pan 10 minutes. Invert onto wire rack; turn right side up.
Cool completely. Cut into 16 slices.
