Recipe - Moose Roast

1 pound Salt pork
4 pound Rump moose roast
1 tablespoon Dry mustard
2 teaspoon Salt
1 teaspoon Pepper
2 Sliced onions
2 Chopped carrots
2 Chopped celery stalks
2 cup Tomatoes (seeded, chopped &
Strained)
Roll pork out thin. Wrap roast with pork. Refrigerate overnight or
1012 hours. Heat oven to 300. Remove & discard pork. Rub thoroughly
with mustard. Season with salt & pepper. Place in roaster. Surround
with vegetables. Pour tomatoes over. Cover & bake 2 hours.
