Recipe - Mondel Schnits

2 Eggs
One half cup Sugar
Three fourths cup Flour
One half teaspoon Baking powder
Three fourths cup Almond, cut or sliced up
2 tablespoon Water, ice
One half teaspoon Lemon extract
*OR:
One half Lemon, juice of
2 tablespoon Sugar
The almonds need not be blanched, just cut or sliced up fine.
Sift flour and baking powder together, then set aside.
Cream the eggs and sugar thoroughly. Add the extract
and water and beat hard. Add the cut or sliced up nuts and
flour, beating lightly until thoroughly mixed. Pour
the batter into a greased pan, sprinkle sugar over the
top and bake at 350F until brown. Allow the cake to
cool in pan before cutting in slices.
