Recipe - Moms Potatoes

6 lg or
8 md Red potatoes, boiled,
cooled, minced
1 One half cup Sour cream
1 cn Condensed cream of chicken
soup or cream of mushroom
soup or cream of chicken
and mushroom soup
(undiluted)
1 One fourth cup Grated sharp cheddar cheese
(up to 11/2)
One fourth cup Melted butter
One fourth cup Finely minced onion (up to
1/3)
Boil 6 large or 8 medium red potatoes till done. Let cool till you can
handle them. Dice potatoes. (No need to peel unless you want to.)
Preheat oven to 350 F. Butter a 9" x 13" pan.
Add remaining ingredients to potatoes and mix till combined. Put potato
mixture into pan and bake for 30 35 minutes. Remove from oven.
Sprinkle top of potatoes with some bread crumbs and a little additional
grated cheese (maybe One fourth cup or to taste). Put dish under broiler till
browned to your taste on top.
