Recipe - Moms Delicious Lemon Meringue Pie

4 Island eggs; separated
1 cup Sugar
1 lg Lemon; zest and juice of
2 tablespoon Sugar; juice of
1 Pie crust; (9 inch)
Beat yolks of 4 eggs with Three fourths cup of sugar. Add lemon and cook in a double
boiler until thick. Beat 2 egg whites with One fourth cup sugar and fold into
cooked mixture. Put in a baked pie crust (Mom always used 9" pie' plates)
and cover with beaten whites of 2 eggs with 2 tablespoons sugar added. Bake
at 400 degrees for 10 minutes. Me ke aloha, Mary
