Recipe - Mom Lewis Mushroom Rolls

1 pound Mushrooms; finely chopped
One half cup Butter
6 tablespoon Flour
1 One half teaspoon Salt
2 cup Light cream
2 teaspoon Lemon juice
1 teaspoon Onion salt
1 One half Loaves cut or sliced up white sandwich
bread
4 tablespoon Melted butter
These are easy and can be made ahead. Freeze very nicely.
Preheat oven to 400~ degrees. Saute the mushrooms in the butter for 5 mins.
Remove from heat and cool slightly. Add the flour and blend well, then add
the salt. Stir in the cream and cook, stirring constantly, until thick. Add
the lemon juice and onion salt, and cool. Remove the crusts from the bread
and roll slices very thin with a rolling pin. Spread some mushroom mixture
on each slice of bread and roll up. Place on a baking sheet, seam side
down. Place in the freezer for at least 10 mins. Cut the rolls into thirds,
brush with melted butter and bake 15 to 20 mins. Makes 7 to 8 doz
