Recipe - Mollys Onion Relish

2 cup Maui onions, chopped
One half cup Green bell pepper, minced
3 tablespoon Pimiento, minced
One half cup Apple cider vinegar
One fourth cup Water
One fourth cup Sugar
1 teaspoon Caraway seed
Three fourths teaspoon Salt
1/8 teaspoon Hawaiian hot sauce, *
* any hot pepper sauce can be substituted This relish makes an excellent
topping for hamburgers or serve alongside roast pork or other meats.
Combine onions, bell pepper and pimiento and set aside. Combine vinegar,
water, sugar, caraway seeds, salt and hot pepper sauce in saucepan. Bring
to boil and simmer 5 minutes. Pour over onion mixture. Refrigerate several
hours before serving. Makes 2 Three fourths cups.
