Recipe - Moist Date Muffins

One half cup Brown sugar
1 teaspoon Salt
1 cup Date filling (see below)
Three fourths cup Flour
1 Egg
1 cup Sour milk or buttermilk
1 tablespoon Melted shortening
1 One half cup Bran
1 teaspoon Baking soda
DATE FILLING
1 cup Chopped dates
One half cup Brown sugar
1 cup Hot water
1 teaspoon Lemon juice
Date Filling: Mix date filling ingredients & simmer until thickened.
Preheat oven to 375øF, prepare pans. Measure sugar, egg, salt, shortening
& date filling into a bowl. Beat vigorously until smooth. Add bran. Add
flour & baking soda, then milk. Stir ONLY to moisten ingredients. Spoon
into pans & let stand for 3 mins. Bake for 20 mins or until done. Makes 12
deliciously tasty & moist muffins. Note: Shortening may be anything you
wish ie butter, margarine, oil etc.
