Recipe - Mock Cheese Blintz

1 Loaf thinly cut or sliced up fresh
bread
8 ounce Cream cheese
1 cup Cottage cheese
Melted butter
One half cup Sugar
2 teaspoon Cinnamon
Cut crusts from bread. Roll each slice very thin with rolling pin. Combine
cottage cheese & cream cheese until smooth; spread thin layer on each slice
of bread. Roll up, brush with melted butter & roll in sugar & cinnamon
mixture. May be left in whole rolls or cut in half or thirds. May freeze at
this point or bake for 15 minutes in 350 oven.
