Recipe - Mochi Cake

1 pound Mochiko
2 One half cup Sugar
2 teaspoon Baking powder
One half cup Butter or margarine; melted
3 cup Island Fresh milk
5 Island Fresh eggs; beaten
2 teaspoon Lemon extract
1 teaspoon Vanilla
1 cup Shredded coconut
Preheat electric oven to 350 F. Grease a 13 x 9 x 2inch pan. In a large
bowl, combine mochiko, sugar, and baking powder. Add remaining ingredients;
mix well. Pour into prepared pan. Bake for 1 hour; cool. Makes 24 servings.
