Recipe - Mixed Vegetable Salad

Ingredients:

1 small Head letuce, minced
1 Cucumber, peeled & cut or sliced up
1 small Green papaya, seeded &
julienned
2 Tomatoes, cut into wedges
4 tablespoon Green onions, chopped
4 tablespoon Cilantro, chopped
4 tablespoon Peanuts, roasted & crushed
2 Red chilies, julienned
One fourth cup Lime juice
1/8 cup Soy sauce
2 teaspoon Sugar

In a large salad bowl, arrange in layers the lettuce, cucumber, papaya,
tomatoes, onion & cilantro. In a small bow, mix together the peanuts,
chilies, lime juice & soy sauce. Pour over the salad, toss & serve.
