Recipe - Mixed Fruit Cream Cheese Pie

Ingredients:

8 ounce Neufchatel cheese; low fat
creamcheese, softened
4 ounce Light frozen whipped topping
One half cup Raspberry or strawberry
preserves
1 Reduced Fat Graham Cracker
Crust; (6 oz.)
3 cup Assorted seasonal fruit;
(strawberries, kiwi,
blueberries, raspberries,
peaches)
1/3 cup Currant jelly; optional
1 tablespoon Almond flavored liqueur; OR
One fourth teaspoon Almond extract; optinal

Beat cream cheese and preserves with electric mixer on Medium speed until
smooth. Fold in whipped topping with electric mixer on low speed, until
smooth. Spread evenly over bottom of crust.* Arrange fruit attractively
over filling. Heat jelly in a small saucepan or in a Microwave oven until
melted; stir in almond flavoring. Brush glaze evenly over fruit. Serve
immedately or chill up to 30 minutes. Makes 8 servings. Preparation time:
15 minutes. Chilling Time: 30 minutes. * If desired, pie may be made ahead
to this point; cover with dome and refrigerate up to 24 hours before adding
