Recipe - Mixed Citrus Salad A La Greens Restaurant

4 cup Spring Lettuce Mix
2 Blood oranges; peeled and
cut into segments
4 Kumquats; cut or sliced up thin with
the seeds discarded
One half Papaya; cut into 1" slices
1 cup Herb croutons
1/3 cup Lemon juice
One half cup Salad oil
Salt and pepper
In a large bowl, add the spring mix, blood oranges, kumquats, and papaya,
and gently toss. Add the oil, lemon, salt and pepper more or less to taste
and toss again. Sprinkle with the croutons, lightly toss, and serve.
