Recipe - Mixed Bean Vegetable Soup

2 cup Mixed dried beans, washed
and drained
8 cup Water
1 Clove garlic, minced
1 lg Onion, chopped
2 tablespoon Lemon juice
2 tablespoon Honey
2 Bay leaves
1 cn (24oz) vegetable or tomato
juice
1 cn (16oz) tomatoes, undrained
2 cup Sliced carrots
1 One half cup Shredded cabbage
1 cup Chopped celery
One fourth cup Chopped green bell pepper
Beef bouillon to taste
Salt and pepper

In large container, cover beans with 3 quarts water. Soak overnight
(minimum 12 hours). Rinse and combine in large soup pot with 8 cups water,
garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hours.
Add remaining ingredients and simmer, covered, for One half to 1 hour, depending
on size of vegetables. Remove and discard bay leaves before serving.
Substitutions on vegetables is encouraged.
