Recipe - Miss Daisys Spinach Balls

Ingredients:

1 pack Frozen chopped spinach; (10
ounce)
One half cup Very fine breadcrumbs
1 Egg; lightly beaten
One fourth cup Partskim ricotta cheese
One fourth cup Grated cheese
3 Green onions; chopped fine
One fourth teaspoon Ground cumin
2 teaspoon Freshly squeezed lemon juice

Assemble all ingredients and utensils. Cook the spinach according to the
package directions. Drain and squeeze out the excess water. Stir in the
remaining ingredients and shape the mixture into 1inch balls. Arrange the
balls on a nonstick baking sheet. Bake in a 400 degree oven for 12 to 15
minutes or until lightly browned. Yields 15 appetizers or 5 servings of 3
