Recipe - Minted Melon

Ingredients:

1 Orangefleshed melon; seeded
flesh in lg. cubes
1 teaspoon Grated orange rind
One fourth cup Orange juice
2 tablespoon Sugar
1/3 cup Raspberry vinegar
One fourth cup Fresh mint; finely chopped

Put melon cubes in serving bowl. Combine other ingredients; mix well to
dissolve sugar. Pour over melon. Chill, covered, for an hour to let
flavors blend.
