Recipe - Minted Couscous (Mf)

1 cup Dried couscous
1 One fourth cup Hot boiling chicken broth or
water
Olive oil
One half cup Fresh mint leaves; chopped
4 Plum tomatoes; seeded and
cut into One fourth inch dice
Salt and pepper
Set couscous in a bowl. Pour boiling broth or water over it and let steep
for One half hour.
Right before eating, heat some olive oil in a skillet. Add couscous and
cook, stirring constantly, until couscous is warmed through.
Remove it from the heat and add mint and fresh tomatoes; season to taste
with salt and pepper.
