Recipe - Mini Morsel Cupcakes

2 One half cup Flour
2 One fourth teaspoon Baking Powder
One half teaspoon Salt
1 cup Butter; Softened
1 One half cup Sugar
2 teaspoon Vanilla Extract
4 Eggs
1 cup Milk
12 ounce Semisweet Mini Morsels;
Divided
1 cup Semisweet mini morsels
One half cup Butter; Softened
2 One half cup Powdered Sugar
One fourth cup Milk
1 teaspoon Vanilla Extract
Preheat oven to 375. In bowl, combine flour, baking powder and salt; set
aside. In mixer bowl, beat butter, sugar and vanilla extract until creamy.
Add eggs, beating well after each addition. Blend in flour mixture
alternately with milk. Stir in Three fourths cup mini morsels. Spoon batter into 24
paper lined cups. Bake 18 to 22 minutes or until tops spring back when
lightly pressed. Cool. Spread with chocolate frosting. Sprinkle with
remaining One fourth cup mini morsels. Frosting: Melt remaining 1 cup mini
morsels. Cool. In mixer bowl, beat butter, powdered sugar, milk, vanilla
and melted chocolate until creamy.
