Recipe - Mini Madeleines

2 Eggs
1/3 cup Sugar
One fourth teaspoon Salt
One half teaspoon Lemon extract
One half cup Sifted allpurpose flour
One fourth cup Butter, melted and cooled
Preheat oven to 375 degrees F. Grease mini madeleine pan. In mixing bowl,
beat eggs, sugar, salt and lemon extract at high speed until thickened (5
minutes). Fold in flour and cooled butter. Spoon into prepared pans. Bake
10 to 12 minutes or until lightly browned. Remove from pans, cool on rack.
Yield: 3 dozen.
