Recipe - Mini Breakfast Quiches

4 ounce Diced green chilies
2 ounce Diced pimentos; drained
3 cup Precooked white rice
2 Egg substitute equivalents
1/3 cup Skim milk
One half teaspoon Cumin
1 ds Salt and pepper
1 cup Lowfat cheddar cheese
Preheat the oven to 400 degrees. In a large mixing bowl, combine the
chilies, pimentos, rice, eggs, milk, cumin, salt, pepper and One half cup of the
cheese. Spoon mixture evenly into muffin cups and sprinkle with remaining
cheese. Bake for 12 to 15 minutes or until set. Carefully remove the
quiches from the pan, arrange on a platter and serve.
