Recipe - Minestrone Alla Milanese Soup

2 ounce Pork back or bacon
1 Onion chopped
4 Stalks celery chopped
2 md Potatoes minced
1 tablespoon Parsley chopped
1 lg Carrot minced
4 ounce Canned white beans
4 ounce Marrow, veal if poss
Diced
2 lg Tomatoes minced
4 ounce Cooked rice or barley
2 tablespoon Grated parmesan
6 cup Stock or consomme
2 ounce Butter
1 Salt & pepper
Saute bacon, onion, celery & carrot over moderate heat without browning for
10 min. Stir occasionally. Add beans, potatoes, marrow and stock. (If you
want to substitute barley for the rice, add it now.) Simmer covered for 1
One half hrs. Add tomatoes and rice (if you didn't use barley). Season and
simmer for another 20 minutes. Just berfore serving, add parmesan &
parsley. Serve w/addl. cheese at the table.
