6 ounce Pasta, Uncooked Macaroni
3 tablespoon Olive Oil
1 md Onion, Chopped
2 Cloves Garlic, Chopped
2 Leeks, Chopped
2 Stalks Celery, Chopped
4 sl Bacon, Chopped
2 lg Potatoes, Diced
One half Head Cabbage, Chopped
1 cup Spinach, Chopped
3 tablespoon Tomato Paste
1 qt Chicken Stock
19 ounce Romano Beans, Rinsed
Parmesan Cheese, Grated
Cook the pasta and drain, reserving 1 cup of the water.
In a large pot, heat the oil and add the next 10 ingredients. Cook until
the vegetables are slightly tender. Add the reserved pasta water, chicken
stock, Romano beans, pasta and simmer for 3040 minutes.
Adjust the seasonings and serve topped with grated cheese.
