Recipe - Million Dollar Meatballs

2 Eggs; lightly beaten
One half cup Soft bread crumbs
One fourth cup Grated Parmesan cheese
1 pack Frozen chopped spinach;
thawed
1 pound Ground beef
3 tablespoon Shortening
1 One fourth cup Water
2 tablespoon Lemon juice
1 Envelope brown gravy mix or
1 cn Cream of mushroom soup
Combine eggs, bread crumbs & cheese in mixing bowl. Drain spinach well; add
with beef to egg mixture & mix lightly. Shape into meatballs. Brown in fat
in large skillet; pour off excess fat. Stir in 1One fourth cups water, lemon
juice & contents of gravy mix (or can of soup). Simmer uncovered 1520
minutes or until meatballs are cooked.
