Recipe - Mikeys Meatloaf

1 pound Ground pork
One half pound Ground lamb
One half pound Ground veal
2 Carrots (grated)
1 Onion (chopped)
One fourth cup Saltine crackers (crushed)
One fourth cup Oatmeal
One fourth cup Bread crumbs (or less)
1 teaspoon Salt
One half teaspoon Black pepper
One fourth teaspoon Cayenne pepper
One half cup Sour cream
1 Egg
One half teaspoon Dried sage
Cook carrot & onion in microwave on high for 3 or 4 min. to soften.
Combine all ingredients in large bowl and mix well. Add only enough bread
crumbs so that the loaf holds together well. Form into a loaf & place into
an Au gratin or shallow baking pan, large enough to hold it. Preheat the
oven to 350 deg. and cook loaf for 1 One half hrs. or until internal temp.
reaches 170 deg. Serve with salsa ketchup or your favorite sauce.
