Recipe - Mikes Salse Di Pomodoro Alla Puttanesca

Categories: Italian, Pasta, Sauces, Mikes Salse Di Pomodoro Alla Puttanesca
Ingredients:

2 One half cup Canned plum tomatoes, peeled
2 tablespoon Olive oil
3 Garlic cloves, minced
2 tablespoon Parsley, dried
One half teaspoon Oregano, dried
10 Anchovie fillets, chopped
1 cup Kalamata oilves, cut or sliced up
1 Hot red peppersmall, minced
2 teaspoon Capers
Salt and pepper to taste
Cooked spaghetti

~Tomato Sauce Harlot Style

Before anything, open the canned tomatoes and chop into small pieces. Start
cooking the spaghetti per package directions. Meanwhile, saute the garlic
in the olive oil till bubbly, but not brown. Add the tomatoes, parsley,
oregano, olives, peppers, anchovies, and capers. Stir and simmer for 10
minutes or until thickened a bit. Season to taste with salt and pepper.
Drain the pasta when done cooking, toss with the sauce and sprinkle with
some parmesan, if you really must. I think it detracts from the flavors of
the sauce.
