Recipe - Middle Eastern Kebabs

1 Clove garlic, very finely
chopped
1 teaspoon Fresh root ginger, minced or
grated
2 tablespoon Tomato puree
1 tablespoon Lemon juice, fresh or
bottled
1 tablespoon Freshly chopped flatleaf
parsley
1 teaspoon Freshly chopped mint
One half teaspoon Ground cumin
1 pn Cayenne pepper
650 g Healthy eating lamb mince
1. Preheat the grill or barbecue. Put all the ingredients, except the lamb,
into a bowl and mix together. Add the lamb and mix well using your hands.
2. Shape the mixture into eight sausages. Thread them onto skewers. Cook
under the grill for about 1012 minutes, turning them over from time to
time. Serve with pitta bread, salad and yogurt.
