Recipe - Microwave Eggnog Fudge

Ingredients:

2 cup Sugar
1 cup Dairy eggnog
1 Light corn syrup
2 Butter
1 Vanilla, brandy, or rum
flavoring
One half cup Nuts; chopped, optional

In a 2quart bowl or casserole, mix sugar, eggnog, and corn syrup. Cover
and microwave on HIGH 4 to 5 minutes, until boiling, stirring once or
twice.

Stir and cover again and microwave on MED (50%) power for 4 to 6 minutes,
until mixture reaches a softball stage (235240 degrees F.). Remove from
microwave and let cool to about 110 degrees F. Add butter and flavoring of
your choice. Beat until very thick. Add nuts and spread in a buttered
pan. When set, cut into squares.

Note: Length of time to cook on MED may vary with microwaves. I had to
cook mine longer than the four to six minutes, but a higher powered
microwave would take a shorter time. Just continue at MED for 2 to 3
minutes increments until you reach the softball stage.
