Recipe - Microwave: Tuna Bulgur Salad

1 One half cup Water
1 cup Bulgur
One half teaspoon Salt (approx)
6 Green onions, cut or sliced up
2 Tomatoes, seeded and chopped
1 1/3 cup Seedless cucumber, minced
1 cup Fresh parsley,chopped
6 One half ounce Canned chunk tuna,
drained and flaked
3 tablespoon Olive oil
2 tablespoon Lemon juice
Pepper
Serve this main course in hollowedout tomato cups or lettucelined pita
pockets.
In 8cup casserole, combine water, bulgur and salt; cover and microwave at
high until boiling, 6 minutes. Stir; let stand, covered, for 10 minutes.
Add onions, tomatoes, cucumber, parsley and tuna; toss well. Toss with oil
and lemon juice; season with pepper and salt to taste.
Serve at room temperature.
