Recipe - Michikos Rice And Chicken

2 Chicken breasts; deboned and
boiled, chopped small
1 pack Shitaki mushrooms; soaked in
warm water for about 30
minutes, destemmed and
cut or sliced up
3 tablespoon Mirin sweet seasoning
3 tablespoon Sugar
Soy sauce
4 cup Short grained rice; washed
One fourth cup Diced or cut or sliced up (very small)
carrots or green beans (up
to 1/2)
Mix sugar and Mirin, set aside. In rice cooker, have rice with water to
proper line for 4 cups. Pour Mirin/ sugar mixture on top of rice. Pour soy
sauce, enough to make it light brown. Gently place chicken, cut or sliced up shitake
mushrooms, carrots or green beans on top rice. Cook in rice steamer until
done. Let stand in covered rice steamer an additional 3045 minutes before
opening, and mixing together. Eat. This is absolutely delicious. allot of
times I leave out the meat and add another One half again amount of Shitakes.
