Recipe - Miami Muffins

One half cup Fructose
2 tablespoon Canola oil
One half cup Fatfree yogurt; plain
1 Egg white
One fourth cup Orange juice
2 cup Flour
1 One half teaspoon Baking powder
1/8 teaspoon Salt
One half teaspoon Nutmeg
One half cup Mango; chopped
One fourth cup Dried apricots
One fourth cup Toasted almonds; chopped
Mix all ingredients. Pour batter into sprayed muffin tins. Bake at 350
degrees for 1015 minutes.
Makes 12 large muffins. 1 serving = 1 muffin
1 starch/bread exchange
One half fruit exchange 1 fat exchange
