Recipe - Mexican Mint Marigold (Tagetes Lucida)

1 small Onion, peeled
6 ounce British minced beef or lamb
2 tablespoon Tomato ketchup
8 ounce Can chopped tomatoes
1 teaspoon Cliilli powder
8 ounce Can red kidney beans
5 fl Stock or water with
One fourth Stock cube
3 tablespoon Canned sweetcorn
Salt and black pepper
Finely chop the onion. Place the meat and onion in a pan over a very low
heat and dry fiy until golden. Ifthe meat is lean add 2 teaspoons oil. Add
all the other ingredients (drain the canned beans and sweetcorn well) and
simmer for 15 minutes. Serve with rice or pasta and a green vegetable.
